Assamica is the plant responsible for producing Black Tea and the leaves are generally large than other varieties of the plant. Black Tea gains its darker coloration and stronger taste due to the extensive oxidization process. Once the tea leaves are harvested and rolled, oxidization occurs which involves keeping the leaves in a controlled environment.
Varieties – Some popular varieties of Black tea include Darjeeling, Early Grey, English breakfast, Ceylon, and Kangra.
