Sencha is, in our humble opinion, one of the foundational teas that all tea drinkers should be able to brew. A proper Japanese Sencha green tea has so many layers to experience that every tea drinker should take some time to learn how to truly experience it and be able to share it with others.
When brewing this tea, start with 2 minutes and try this brew. You’ll likely find some astringency with it. If you don’t enjoy it, toss that brew and brew again for 3 minutes. This time, look for the smoother taste of this tea and the less astringent mouthfeel. Brew this tea 3 or 4 times to begin to experience the many layers of pleasure this tea has to offer.
Brew @ 180°F using 2-3 grams per cup for 2 minutes
